how long should my speed training workout last?

If you are doing your speed work after the plyometrics then you should not do much.
10×100 strides is enough.
Doing plyometrics 2 days each week is a excellent thought, you should be doing simple distance of 3 to 5 miles 3 days, and lift weights twice each week.
The length of time you are training is not vital, what is vital is that you are training correctly in your form, and recovering from a hard day before doing another hard day.
A plyometric day usually only lasts less than one hour, but I don’t know your routine and how much rest you are taking between drills.
About an hour, hour and half should do it. But if you want really excellent results, only work out on monday, Wednesday, and friday.
